METHOD OF HARVESTING

VINIFICATION
Destemming, static decantation of the must for about 20 hours at 10° and fermentation with temperature control at 16-18° in steel tanks. Once decanted, the wine stays on fine lees for about 6 months.
TASTING NOTES
The wine displays an incredible range of strong and peculiar aromas, with the characteristic flavours of fig, tomato leaves, pepper and herbaceous plants.
MATCHING
It is well structured, tasty dry, full-bodied and persistent. Ham appetizers and salted seafood dishes.
