Flysh of Cormons called “Ponca", a soil rich in mineral salts and microelements. A mixture of marl and sandstone which has been stratified over millenium.
Hand Picking with grape selection.
The grapes are destemmed, left macerate and ferment in contact with the skins for about 15 days at a temperature of 22/26° in cement tanks. After racking the wines are racked in barriques where malolactic fermentation takes place, The aging can last from 18 to 24 months. The wine has an intense and vivid colour with garnet-red hints. It is both elegant, delicate and strong at the same time.
On the nose it has a strong smell with scents of fruit and spicy nuances. On the palate the wine it has a velvety, full taste, with a long aftertaste. It is an expressive wine, rich and suitable for an ageing process.
Suitable with game, white or red meat and strong cheese.
