Pale story yellow colour. Warm citrus overtones and minerals. Taste is full, warm and structural long and persistent. Acidity balance.
Short maceration on skin contact, soft pressing, clarification by decantation, alcoholic fermentation in cement tank, racking in French Tonneaux where began the malolactic fermentation, ageing on yeasts for about 7 months.
